This is my new favourite quick and healthy meal. It packs heaps of flavour and nutrition in with just a few simple ingredients. It also makes me question more than ever how people can possibly hate brussels sprouts.

RECIPE: My take on Pineapple Fried Rice
I find it kind of bizarre that I hadn’t made fried rice until last weekend, when I made not once, but twice (!!!). The first was a kimchi fried rice with a couple of eggs and leftover veg (bonus pic of that here). This one, I made for my work lunch that week. And it was legit.
